What is meant by cold extraction
We extract the oil cold with mechanical mechanisms and procedures. The “cold” process requires that the temperature does not exceed 27° centigrade while the olives are pressed. In this way the quality of the oil does not decrease and above all the most important organoleptic characteristics of the oil are preserved.
